Three Cheese and Roasted Tomatoes Spread

~~posted by Jen

3 Cheese & Tomato Spread on half of a Pop Rice
Today was crazy busy, I went out to lunch and a double feature at the movies with some friends and got home just in time to watch a little football before "Amazing Race" came on. We needed some snacks for tv viewing of course. Well, the boys seemed to think they did.

That translates to, "Jen, will you please whip us up some snacks?" So I did! Wegman's, a northeastern grocery chain that I love and adore, makes this delicious spread at their cheese bar. They have several varieties, but one of my absolute favorites is the roasted tomato one. It's kind of pricey to buy the one they make for you, so I decided to make my own.

A little confession here--I cannot roast tomatoes if my life depended on it! I burn those suckers every.single.time.  Shari (Jupiter6 on OH) and Tara (TaraK) have tried to tell me time and time again precisely how to do it, but I screw it up every blessed time! (Somewhere in Baltimore, Nik just fainted at me admitting to a shortcoming! lol)

Now y'all know how much I love to cook and how I get all Martha-esque as my BFF calls it. So you can imagine how much it pains me to admit to the free world and blogosphere that I can't roast a fricken tomato. But I digress. Thankfully, Wegman's has an awesome olive bar that happens to have quite delicious roasted tomatoes on it all ready to go! I am all about a shortcut, so that absolutely works for me.

If you too are tomato-roastingly challenged, or don't have a groovy olive bar, you could also use sundried tomatoes packed in Olive Oil. They're usually near the pasta or in the International Foods section of the supermarket. I tweaked this a bit to get some more protein into it, here's the deets:

Jen's 3 Cheese Roasted Tomato Spread

Ingredients:
3 cups shredded three cheese blend (I used the cheddar/colby/monterey jack)
3/4 cup Greek yogurt
1/4 cup light mayonnaise
1 pint roasted tomatoes, chopped fine in the mini food processor2 tbsp Herbs de Provence1 tbsp Garlic Powder
1 tbsp Onion Powder
salt and pepper to taste

Directions:
In a small bowl, whisk together the Greek yogurt, mayonnaise, herbs de Provence, garlic powder, and onion powder until thoroughly combined. In a larger bowl, combine the shredded cheese and finely chopped tomatoes, then fold in the yogurt mixture and blend it all together. Taste for seasoning and add salt and pepper if needed to suit your taste.

Store in a sealed container in the fridge for up to 1 week.

Early out, I heated this up in the microwave just until the cheese melted together and ate it straight up. Nowadays, I love to eat this spread on Pop Rice or a warm slice of P-28 High Protein bread fresh from the toaster.

If you use unflavored protein powder, you could certainly add some to this to make the protein count even higher. This is delicious spread on thin-sliced deli meat to make "roll-ups" for lunch, too!

I-HOP ain't got nothin' on us!!

Who hasn't drooled over those IHOP commercials for stuffed French Toast? And if you say you haven't, then you're probably lying! Those commercials are too much for me, so I had to make up a protein version we could enjoy post-WLS.

It's way easier than you might think, and looks really pretty on a plate. A very impressive brunch dish if you're having company, and it was a big hit with the non-ops in my house, too. Y'all know that is always my test of a WLS-friendly recipe, if the non-ops here eat it and say it's good, then I know it's a hit.

Good news for newbies who can't handle bread just yet! The filling by itself is a DELICIOUS meal for the pureed/soft stages! I sometimes eat it for breakfast with a spoonful of sugar free fruit preserves or Sugar Free Fruit Pie Filling stirred into it. Best of all, it's 7 grams of protein for the ricotta cheese plus 30 grams from my protein powder, talk about a big 37 gram protein punch in a little quarter cup serving!

Ricotta with protein powder & blueberry SF Syrup & Whippage

Super easy to make, you won't even believe it! Start by following the directions for Protein French Toast from the Bananas Foster French Toast post. 1 slice is a WLS-size portion for me at 2 years out. Earlier outs, probably 1/2 a slice (the P-28 protein bread is VERY filling.) Now here's how to make the filling and syrup:

Jen's Stuffed French Toast with Homemade SF Blueberry Syrup
First, the filling:
Ingredients:
1 slice Protein French Toast
1/4 cup ricotta cheese
1 scoop Vanilla protein powder
Splenda to taste (my protein powder is sweet enough, but yours may not be)

Directions:
In a small bowl, whisk the protein powder into the ricotta cheese until thoroughly combined. If your protein powder needs sweetener, add Splenda to taste.

Cut the toast slice into 4 triangles. Spread the ricotta filling between 2 of the triangles, then repeat with the other 2. Voila' stuffed French Toast! Now top it with the fruit or syrup of your choice. I made blueberry sugar-free syrup, you can use whatever fruit you like, or skip the fruit altogether.

Sugar Free Fruit Syrup:
Ingredients:
1/2 cup frozen blueberries (or strawberries, blackberries, peaches, etc)
1 tsp Vanilla Extract
1 tbsp lemon juice
1/4 tsp corn starch, dissolved in 2 tbsp warm water (whisk it so it won't lump)
Splenda to taste
1/2 cup Sugar Free pancake syrup

Directions:
Add the blueberries, vanilla, and lemon juice to a non-stick skillet. Let it heat until the fruit is thawed (if using frozen), then whisk in the cornstarch mixture and SF pancake syrup. Stir until combined and let it heat through, then taste for sweetness and add Splenda if needed.

I usually store this in a covered plastic container in the fridge for up to a week, it's great on the stuffed or un-stuffed French toast. I also love stirring it into my Greek Yogurt or the ricotta and protein filling. NOM!

The Bariatric Foodie Survival Guide to Denny's

Ah Denny’s…great American slinger o’ pancakes! What have you to offer me, the surgically altered, health conscious, slightly carb-phobic post-op???

You’d be surprised.

Denny’s has come up a bit in the world from its roots as a culturally insensitive greasy spoon. I can say that I eat there at least once every two months (and if the divas had it their way, it’d be once every two days).

So here’s our peek at Denny’s: what to order, what to avoid and what to convince your spouse to get so you can have approximately one bite of it!

Breakfast

This is the foundation of the Denny’s menu and there are a lot of choices. Many of them are not very good. Some look ok from a protein perspective (like steak and eggs for example) until you look at how they are cooked (in copious amounts of butter and oil).

So what’s a post-op to do? Well…first you have to get a bit high maintenance. Denny’s does have “Fit Fare” choices on the menu, but I find it’s often stuff I don’t like very much, so I err on the side of ordering something from the traditional menu and swapping some things out. You go with what feels right for you. Here’s some favorites of mine.

Senior Omelette w/ egg whites, chicken sausage and veggies

I don’t know why folks think the senior portion needs to be smaller. In my family, the older you are, the more you tend to eat. But I digress. This omelet is made with two eggs instead of there (although the regular omelet seems like it is made out of six). I get egg whites because they stopped offering egg substitute. At home I make my omelet with one egg white + one whole egg (I like my omelet to be yellow) but try that in Denny’s and…you’re never quite sure if you are getting all the eggs or what you asked for.

Senior Grand Slam

I get this and make some modifications. I usually ask for fruit instead of toast (and extra points if they have melon, which I like very much), or cottage cheese (which I gladly pay extra for). I get my eggs either as egg whites that are scrambled in cooking spray (and I ask specifically for cooking spray) or over medium (I am not fat-phobic…just a moderator). I usually ask for turkey bacon (I’ve all but forgotten the taste of pork bacon…I think I’m going to keep myself weaned) and/or chicken sausage. The chicken sausage is about 80 calories less per serving than the pork, but still has 9g of fat. So you can use your best judgment on whether it's "better" or not. A serving of their turkey bacon has 72 calories, 4g fat and 8g protein.

Pancakes

I generally stay away from them. It’s just not worth it to try to consume pancakes. HOWEVER, the divas love them. And I must admit that if I am feeling particularly robust in appetite, I will have a bite (especially since the divas have all but forgotten the taste of sugar syrup and always get sugar free). For this reason, I suggest the Hearty Wheat pancakes. They still have white flour in them but it’s mixed with whole wheat and typically made using cooking spray instead of oil on the grill. I’d err on the side of requesting the cooking spray though. The Hearty Wheat pancakes are 310 calories an order (versus 340 for the regular), a whopping 64g of carbs, with 8g of fiber (versus 68/2 for the regular). Yeah...I'll stick to my bite. And from now on, the divas are sharing an order!

For pancakes you can feel good about eating any time, click here.

Lunch/Dinner Options

I don’t usually do dinner at Denny’s. It just doesn’t feel right. The divas like the burgers. Me and beef got beef though. And to me…sorry…a Boca Burger is not a real burger. So I tend to stick to breakfast. I have, on occasion, however, gotten dinner and here’s what I’ve had.

Senior Tilapia Meal

The tilapia is the stand-out “diet” meal on the menu, and even the stats on that aren't great. The regular meal will cost you 640 calories (which, in comparison to the rest of the menu is not bad), but if you get the senior version (a smaller filet), you knock it down to 450. The fish is grilled soft and comes with with two sides and you can make both of those veggies if you want. Mine has a Cajun variation (which is decidedly un-Cajun). I usually ask for mine with the Cajun seasoning nonetheless and ask for a side of salsa and work it out. To cut calories more, I'd insist they use cooking spray. Luckily, you can tell if they complied or not. The fish comes out more flaky and without a puddle of oil if they've done what you asked them to do.

Cranberry Pecan Salad

This is a relatively new offering and may not be at all Denny’s locations. But it is pretty decent. What I like most is that it comes in a half portion. At 2+ years out, I can finish the half portion. Basically, it’s grilled chicken atop a bed of salad greens with roasted pecans and craisins. If you are sensitive to sugar, tell them to hold the craisins. I can do them so I eat them with whatever low-cal dressing they have. A half portion will cost you 210 calories + whatever dressing you choose. Not bad!

Fit Fare Grilled chicken meal

This meal is always awkward for me. It’s good…don’t get me wrong…but it’s a little meal served on a big plate which comes out looking…empty. It’s the same deal as the tilapia meal, just throw a grilled chicken breast in there. Usually I only eat the chicken (it’s about 5 oz. so that fills me up) and ask for a piece of cheese melted on top and I pretend there’s a bun. It’s not quite the same but I feel like if I keep telling myself there’s a bun…someday it’ll taste like there’s a bun…Anyway, it will run you 380, 57g of protein (which almost guarantees you can't eat it all...so plan for half that amount of calories and protein).

Ok, so here’s some things you may want to stay away from (besides the obvious like the loaded nachos, buffalo wings, and sampler plate…)

Grits – I eat them in moderation but mostly at home. Denny’s has a tendency, no matter how much you ask them not to, to load your grits down in copious amounts of butter. Paula Deen would marvel. I do not. So I skip them.

Any of the “sizzling skillets” – ...And don't give me the "but, Nik, it's protein!" I don't care. Some stuff is just a heart attack waiting to happen. All of the skillets are very heavy on the oil and they sort of have to be so as not to burn the food. If you absolutely must try one, get your spouse or companion to order one, take a bite of theirs and leave it at that. They will cost you at least 900 calories alone and lots of fat!

Toast – now this is subjective. Sometimes I eat the toast. Again, good luck getting them not to slather it in butter. For what it’s worth, though, they serve wheat toast but technically it’s kind of not. It’s actually enriched wheat bread, which is basically white bread with some wheat germ in it. So I’d skip it if I were you. You want “dip it” eggs? Make them at home with your own 100% whole wheat bread, or, better yet, a portion of protein bread.

These are just a few suggestions to get you started. If you come up with a great menu choice at Denny’s that will help out your fellow WLSer, give us a shout! We’d love to hear what you order.

The Egg NikMuffin...

Here at Bariatric Foodie, we’re trying to find a good balance between recipes geared toward newer post-ops and ones for us “veterans.” This one, I would say…is more for the vets (but newbies…this is the kind of stuff you have to look forward to!). This is also good for people trying to wean their family off of fast food breakfasts!

So my life is kind of hectic. I have the two kids, the dog, the two cats, I sit on every committee/board in my neighborhood, I do Pouch Party™…oh yeah…and I also contribute to a certain food blog…

All that is to say that breakfast sometimes has to be on the fly. Now most of the time I do a protein shake, but sometimes I want something savory. To accomplish this, I mainly prep and freeze stuff I can grab and heat up at work. Such is the case with this little gem.

When I first started doing Pouch Party™, I used to demo this sandwich all the time. And I’d forgotten all about it until the other day when my daughter actually asked me to make my homemade turkey sausage (recipe below). And that’s when I fell in love ALL over again…

So here you go…the method…the madness…the Egg NikMuffin!!!

Now for a quicker version of this you can buy low-fat turkey sausage. I make my own. Why? Cuz I like my food better than anybody else’s! If you’d like to try your hand at sausage, it’s ridiculously easy:

Nik’s Turkey Sausage

Ingredients:

1 lb. ground turkey (don’t get super lean. I’d say 85/15)
¼ tsp salt (yes that’s a good bit, adjust if you see fit…)
¼ tsp garlic powder
¼ tsp onion powder
1/8 tsp ground sage
1/8 tsp crushed red pepper (or you can omit if you don’t like the kick)

Directions:

Mix everything well in a bowl (see, easy!). Form into patties and fry. I like to do mine on the George Foreman grill just because it’s low maintenance and I can go do something else while they are cooking.

Now onto the Nik Muffin…

Egg NikMuffin

Ingredients:

One 100 calorie whole-wheat English Muffin
1 egg, beaten (or egg substitute equivalent)
1 turkey sausage patty
1 slice of whatever kind of cheese floats your boat

Equipment:

1 stainless steel round cookie cutter (or biscuit cutters work)

Directions:

Set your sausages to cooking whatever way you cook them.

Meanwhile, heat a sprayed skillet over a medium flame. Spray the inside of your cookie cutter and place it in the skillet. Pour in egg and allow it to firm up (about 2 minutes or so). Remove ring when egg round is well formed, flip and cook an additional minute.

Meanwhile, toast your English muffin. Spray it down with whatever you use (these days I use Olivio spray, 0 calories!).

Once the egg and sausage are done, layer the egg on the muffin, then the sausage, then the cheese and let it sit for a few seconds. The cheese will melt. Top with other half of muffin and you’re good to go!

For the longest time, a serving for me was half of this. These days I can eat the whole thing but I don’t want to go near food for at least 4 hours!

Either way, it’s a hearty way to start your day and on the overall much better for you than that “other” muffin sandwich.

Enjoy!

CLICK Espresso Protein Drink, Mocha, 16-Ounce Canister

In case you didn't see our Facebook post earlier this week, Amazon has a great deal on Click for just $20.88 per canister. if you buy it through Subscribe and Save it's only $17.75! Free shipping on orders over $25, so that's a pretty awesome deal.

In addition to the Mocha Espresso flavor, they now have Vanilla Latte flavor also. My favorite flavor is Mocha, but I also really like the flavor of the Vanilla, too. We all make our Click differently, this is Nik's version of the Click Frapp and one of her Vanilla Click Frapp.

Since I first tried the Vanilla Click a few weeks back, I've posted the White Russian Protein Shake and Pumpkin Spice Latte. Aside from those two, I thought I'd share with you my all time favorite ways to "Click."

Mocha Click Frapp (Cold)

2 scoops Mocha Click
12 oz 2% Milk
3 packets Splenda
3 tbsp SF Hazelnut Coffeemate Creamer (optional--but I am an addict LOL)

Pour the milk in your blender cup first, then add the Click and Splenda. Blend til well-mixed, pour into a mug and top with the Hazelnut creamer. Stir together and enjoy! You can serve it over ice, but I usually don't unless it's a really hot day.

Black Forest Mocha (Hot)

2 scoops Mocha Click
12 oz 2% Milk
3 packets Splenda
2 pumps Davinci SF Raspberry Syrup

Pour the milk in your blender cup first, then add the Click and Splenda. Whiz it til well mixed. Then microwave for 30 seconds, stir. If it's hot enough, pour it into your travel mug or coffee cup, then add the Raspberry syrup. Sometimes I add some SF Coffeemate, usually Hazelnut. If needed, I heat it for a couple more seconds in the microwave.

Vanilla Caramel Latte (Cold or Hot)

2 scoops Vanilla Click
12 oz 2% Milk
3 packets Splenda
2 pumps Davinci SF Caramel Syrup
SF Coffeemate (optional--Fr. Vanilla or Hazelnut or Vanilla Caramel)

Pour the milk in your blender cup first, then add the Click and Splenda and whiz until well mixed. If you want it cold, add the Caramel Syrup (and Coffeemate if you're using it) to your cup, then pour in the Click mixture and stir it up. Add some ice if you want it colder.  For the hot version, follow the instructions for the Black Forest Mocha.

Try these ideas, and come up with your own. Hit us up if you come up with another cool way to Click!
