What the HELL is Sofrito?




Hey Foodies!  This month instead of doing the Foodie Fitness Corner, I’m handling the recipe of the month. 

Long story short: I recently had surgery on my leg and I’m limited in activity. So rather than bore you all with my attempts at exercising within my doctor’s limits, I thought I’d put on my chef hat and bad Julia Child’s accent and share my sofrito recipe with you all.

Now I know what you all are thinking, “What the HELL is Sofrito?”

Those of you who have read Bariatric Foodie for a while have seen this ingredient mentioned many times in Nik’s cooking.  Whenever Nik uses this ingredient in her cooking, there are usually a few comments of the blog along the lines of “what is that?” and “where can I purchase that?”  Well, I’m here with a Foodie two-fer — I’m going to break down the basics of Sofrito and then also share with you all how I make my own!   

Those of you that have never heard of sofrito may have heard of its many cousins in other types of cuisine.   For example:
  • People in Louisiana might know it as the “holy trinity”
  •  In Italian cooking it’s called soffrito
  • The French call it mirepoix
  • It’s known as refogado in Portuguese, epis in Haitian cuisine and ginisá in Filipino cuisine, and suppengrün in Germany. 

(I bet you didn’t know you were going to get a global culture lesson in there too. Three-fer!)

What all these things have in common is that they are basic cooking bases that are used in each type of cuisine for stews, soups, rice and several other types of dishes.  Sofrito (that Nik uses and what I’m going to show you have to make) just happens to be the Latin/Hispanic/Caribbean version of this cooking base.

While there’s lots of variations on sofrito, generally it consists of garlic, onion and tomatoes and can be cooked in olive oil. From there you can add lots of things based on what you like. Some folks add sweet or hot peppers, herbs (like bay leaves, cumin, thyme and parsley). Sofrito is also a great recipe to use for those veggies and herbs that are “on their way home” (almost spoiled but not quite there yet).

I’m all about limiting food waste, so when I have veggies reaching that point, I whip out my food processor and make some sofrito. It freezes well and it really does give your savory recipes that extra something.

So without further adieu, here’s my sofrito making method in four easy steps:

Step One: Gather your veggies. 



Look at how sad and wilted they seem!  Check out that poor bell pepper…it was on its last leg.  And one of those tomatoes had a bad spot I had to cut out. Not picured here are the two heads of garlic I also used. 


Step Two: Chop! 


Here are my veggies all chopped up and ready to be made into sofrito.

Step Three: Mix it up!  


Throw your veggies into the food processor and pulse a few times until they start to resemble chunky salsa.

Step Four: It’s in the bag! 


Or at least it will be once you put it there.  I portion it out into small Ziploc snack size baggies and then put them all into a freezer bag and toss it into the freezer.  When I’m ready to use it, I grab a bag and toss the whole thing in still frozen. It works great!

NOT to be confused with Fit Frappe Vanilla, which your Foodies so kindly reviewed for you yesterday. 

But first...the third finalist ...Alyson W.!!! She took the one ingredient challenge here on the blog and suggested one of my favorite flavors of all time. Orange Sherbert! 


She recommends adding a half a stick of sugar-free orange drink mix to Fit Frappe Vanilla, your preferred liquid and ice. By doing this, you can transform your shake into that old ice cream truck favorite! Congrats Alyson! Your recipe will go up against Penney's "Wake Your A$$ Up!" shake and Bridget's "Ode to Joyous Almond Shake" for a chance to win a full canister of Fit Frappe!

Aesthetics

Heather: Powder looked very smooth and of a fine texture.  Due to having no sense of smell, I did not bother trying to determine odor of powder.  A benefit perhaps as I have read of many complaints of the whey protein smell.  After blending, my shake was nice and thick, exactly how I like it to be.  

Samantha: It had a bit of a chalky smell maybe.  Not what I expected after smelling their other product. I have another vanilla latte protein product in the house and that product has a much better smell. This protein powder had no real smell. Its appearance was what I expected for a latte based protein powder.

Gwen: Looked and smelled like any other protein powder I’ve used.

Preparation

Heather: I made the Vanilla Latte as I do all of my other protein drinks, with skim milk and ice in my Ninja.  The only exception was instead of throwing in 5 or 6 big ice cubes, I weighed out 180 grams of ice so that I would be tasting the Big Train beverage as directed per package.

Samantha: I prepared this one hot according to the directions. I stirred it until it dissolved and then I set it aside to snap a few photos and it had a separated. I stirred it again and it was fine after that. (Nik Note: Samantha also tried to use the other half of the sample to make a cold shake but reports it didn’t turn out well with the remaining half a sample. She theorizes the attempt might have been better had she used the full sample.)

Gwen: I tried it hot.

Taste:

Heather: The taste of the shake at first was underwhelming, probably because I still had some remnants of toothpaste flavoring in my mouth, however as I progressed, the shake became very good.  The only quality I wasn't sure about was a very, very slight graininess to the beverage.   I'm not sure what that would be and the only similar comparison I can relate it to is when I have added a necessary scoop of a miralax like product to other shakes.  I know everyone says miralax is undetectable, but I can tell a difference, whether it is psychological or not, who knows.  Anyway, the texture of Big Train was similar to my own perceptions, however it was not a detraction whatsoever to the drink.

Samantha: The taste of this product was actually rather disappointing. No really coffee or espresso flavor to it and not really any vanilla flavor either. It was pretty bland on the first
sip.  I have since drunk about half of a cup and still no real flavor. I used half the package and I am wondering if I had added more if that would help the flavor.  Overall this product was lack luster and a bit of a disappointment.

Gwen: I made it hot and it was a disappointment.  It had a bad aftertaste and was not the replacement for my morning coffee that I was expecting.

After-effects:

Heather: I finished the drink in record time - 45 minutes and had no problems with the sugar alcohols.  

Samantha: (Nik Note: Samantha did not report any after-effects.)

Verdict:

Heather: Overall, I found the drink to be very enjoyable and would definitely add it to my rotation.  

Samantha: I might buy it just so I could try it again and add more protein powder to the hot and see if it tastes better. Otherwise I will be sticking with my other Vanilla latte protein powder.

Gwen: I’ll stick to Click.

Bridget submitted a recipe idea she called "Ode to Joyous Almond"


Fit Frappe mocha (8oz recipe)
1 pump (1 tbsp) sugar-free coconut syrup
1/2 pump (1/2 tbsp) sugar-free almond syrup (or sub 2 drips of extract)
8oz milk of your choice (coconut or almond are nice)

Ice

Directions:

Blend with your method of choice (I use the Super Chill Method). If you are adventurous (and have time) sprinkle with some fresh toasted almonds or unsweetened coconut...or sugar-free whippage (whipped cream)!

Aesthetics:

Samantha: The smell of the Vanilla was great. It had a vanilla scent to it but was not over powering. It also did not give off a fake vanilla smell which some protein powders. The look was no different then any other powder.


Heather:  Powder looked very smooth and of a fine texture.  Due to having no sense of smell, I did not bother trying to determine odor of powder.  A benefit perhaps as I have read of many complaints of the whey protein smell. 


Gwen: Looked and smelled like any other protein powder I’ve used.  The Latte one was a disappointment as it didn’t seem to have a smell of coffee.


Preparation: 


Samantha:  I prepared the plain vanilla one way shaken in a blender cup then poured over ice. I was a bit skeptical about only using water. I’ve noticed most say you can use water OR milk they were very specific about only adding water in their directions. I was expected a watery taste since I was using water on not milk. That was in fact not the case!

Heather:  I made the drink with skim milk and my regular allotment of 5 ice cubes, again in the wonderful Ninja machine.

Gwen: I made it with water in a shaker bottle for on the go use. 


The Taste:

Samantha:  It tastes like vanilla frosting. It has that hit of sugary vanilla goodness right at the end. This product tasted way better then I really thought it would using only water and pouring it over ice.

Heather:  It was very tasty!  In fact, I kept tasting it over and over, trying to figure out what it reminded me of. The texture of the drink in my cup was almost like a soft serve ice cream, although it did not seem that thick when I was transferring it to my glass.   Thus this observation made me think of my former love of Dairy Queen ice cream.  I decided right then and there that the Big Train Vanilla Fit Frappe tasted very much the same as the DQ. It was had a nice refreshing taste that was very much enjoyable.  I was so surprised that this "vanilla" drink could literally make me a convert.

Gwen: Better than expected. It dissolved nicely and had a smooth taste.  Thickened up nicely for being made with water.

Any After-Effects?
(I asked your Foodie reviewers to specifically whether they noticed any effects from the sugar alcohols.)

Samantha: I felt fine after drinking this product but in full disclosure I did not drink an entire serving.  My only concern is I do not have a huge sweet tooth so I am not sure I could even get through an entire serving of this product over ice it has a very sugary hit at the end.

Heather: No problems from the sugar alcohols at all. 

Gwen: (Nik Note) Gwen didn't note any after-effects.

The Verdict:

Samantha:  I’d buy it to replace my other protein that I use in baking and making smoothies.  I think it is great product and did not disappoint. 

Heather: I would recommend both as acceptable protein drinks for bariatric patients. I think I will be switching from my base vanilla powder to the Big Train Vanilla as soon as I run out.  It was that good!


Gwen: I would buy this one if I drank more protein shakes. 


Notes:


All three Foodie reviewers noted that they did not like the fact that the sample pack comes with two servings. Like me, they don't want to have to figure out what to do with the other half!


Gwen pointed out that she liked that there were directions for three different ways of mixing the powder, while both she and Heather noted that it mixed nicely with water.

BF Review: Fit Frappe Mocha


But first...

THANK YOU to folks who shared recipes yesterday. It wasn't easy picking a finalist for yesterday, but alas...that is my job. The first finalist...who will qualify to win a full tub of Fit Frappe is...Penney Ulch Vachon!!! Congrats, Penney. You don't need to do anything until this weekend, when your recipe comes to a vote. Then I need you to tell your hubby, your sisters, your brothers and even that weird neighbor down the street to vote for YOU!

Here's Penney's recipe for what she calls her "Wake Your A$$ Up" Shake:

1 c. cold coffee
2 tbsp. Coffee Mate sugar-free Caramel Macchiato Creamer (or to taste
1 serving of Fit Frappe Espresso (the 8 oz. size serving OR  1/2 the sample pack)
1 tbsp Torani sugar-free caramel syrup

(Penney's) Directions:

"Shake it up, baby! And because I am a loon and have to work til midnight, I poured this over COFFEE ICE CUBES! Wheeee"

Penney, I heart you but LOOKING at this recipe is making me jittery! If you are the same, try using a cup of DECAF instead of regular coffee and using plain old ice cubes. K?

Next review up is Mocha. Will YOUR recipe be going up against Penney's in the finals? We shall see!

Ok, so I have to be arrogant for a moment. I know a little something about mocha. No...I mean...I know a little something about mocha. So I was dubious that Fit Frappe could be any better than what I already had going on. But hey, anything is worth a shot, right?

Stats: A bit lower than the Espresso. Again, I give the stats for serving that yields an 8 oz. drink. Here are the stats for all the Fit Frappe flavors.

Calories: 60
Fat: 1.5g
Carbs: 11g
Fiber: 3g (so 8 net grams of carbs)
Sugar alcohols: 6g
Protein: 10g

Aesthetics: Yadda, yadda. Looks like chocolate powder. Smells more chocolatey than coffee, but I've learned that's sort of par for the course. Chocolate and coffee have an interesting relationship. They sort of blend harmoniously. If you add a little bit of chocolate to a lot of coffee, the coffee will taste better (as was the case in the Espresso sample from yesterday). If you add a little coffee to a lot of chocolate, the chocolate will taste better. If you add a lot of chocolate to a lot of coffee THEN you get mocha. So all that is to say the chocolate aroma was actually encouraging. (Didn't know you were going to get a lesson did you? Pop quiz later!)

Preparation: I had ideas, y'all! I was going to make try it my Mocha Forest Trifle...then I said wait no...maybe I will simply make me a really good mocha protein pudding. But then I thought...that's not very Bariatric Foodie so then I was going to throw some in Kittens Love Potion #9 Frosting (which I admit eating sometimes even in the absence of a protein cupcake). But that all came to a halt with...The Super Chill Method of Making a Protein Frosty. Yes, people. Of all the things I could have done with this powder...I made a Frosty. I used the full packet  Lookit:

Notice the indentation...a clear indicator that this is NOT your regular watery protein shake!

The Taste: Ok, raise your hand if you've ever had cheap chocolate. (Raises hand) It's a drag, innit? It's not bitter like chocolate should be, it's not rich. It's just...an imitation. An ABOMINATION! Well...Fit Frappe is NOT made with bad chocolate - it's made with very GOOD chocolate. And that's what I tasted. Good chocolate and coffee waltzing together in my mouth. There was the bitter (from what was obviously quality cocoa and quality coffee), there was the sweet (again, I added no artificial sweetener to this puppy!), there was richness (cuz I made it with milk) and because of my new Frosty-making method this FELT like I was being naughty when I was being ohhhhhhh so nice.

Yes...moving on then. I covered the caveats of this protein powder yesterday. No need to repeat so let's cut to the chase.

The Verdict: More, please? For all my whining about wanting a protein that's JUST coffee, I actually liked this one better than the Espresso (this is not to say anything bad about the Espresso but...I'm a mocha girl...literally AND figuratively).

So I told you what I thought. Here's how you win some Fit Frappe for yourself!

BF Review: Fit Frappe Espresso


Picture it: It's 3 p.m. You're at work. This is the time of day you hit a lull. Your energy has dipped, your patience checked out 20 minutes ago. Your mind is already at home in a bubble bath (that you know you probably won't get because your spouse/the kids/the dog/your neighbor will somehow thwart that effort).

You know what you need right now? You need a little boost. A bit of protein, a little sweet departure and, for those of us far out enough (sorry, newbies!) a small shot of caffeine to get us through these LAST hours of the day.

For the past few weeks when I've had this moment, I've reached for Fit Frappe. Back inna day I would have gone to 'Bux to get a Frappucino. But we're living better now, right?

So let's talk about this stuff (cuz really? "What the hell IS Fit Frappe?"). And after I drone on and on about it, you get the chance to win some! (Or, to cut to the chase of how you win some, look for the bold red underlined words below)

Let's do this! So...first flavor up is...

Espresso!

Let's break this DOWN. 

Stats: I hate to start off a review with a criticism, but I do sorta have a bone to pick with Big Train. I consider myself to be pretty proficient with a nutritional label. And their stats even confused me. But I think I figured it out! Like yesterday...the day before this review was written.

They give you two sets of stats: one for an 8 oz. drink, one for a 16 oz. drink. Their sample pack, however, contains enough powder for a 16 oz. drink even though some of the instructions ON that packet tell you to use half the packet. Note to Big Train: I don't like that. I don't want to use half the packet and figure out how to store the other half.

By the way, here are all the stats to all the Fit Frappe flavors. I'll give you the stats for the 8 oz.

Calories:  70
Fat: 1.5g
Total Carbs: 12g
Fiber: 3g
Sugars: less than 0g
Sugar Alcohols: 7g
Protein: 10g

So it passes muster. The net carbs (total carbs minus fiber) is less than the protein and it has at least 1g protein for every 10 calories. These are not the most prolific protein numbers I've seen but I decided if I could make a "for real, for real" Frappe out of it, I forgive it. Because seriously? It would beat the 'Bux!

Like the other coffee-based flavors, the 8 oz. has about as much caffeine as a cup of coffee. The 16 oz. has about as much caffeine as two cups.

Aesthetics: At first I wished I'd taken pics of the actual powder, but honestly? It isn't that much different from other powders. I would like to point out the aroma. It smelled like coffee. Just coffee. Not vanilla coffee. Not mocha. JUST coffee. That's my biggest beef with other coffee-based protein. It usually reads "vanilla protein" and I am not a vanilla person. So the fact that I didn't pick up vanilla was encouraging.

Preparation: So...let's mix this sucker up! My first try I did hot. Now...the directions do say to use HALF the packet when making either a hot drink or a thin drink over ice. And as I said before, I don't like doing that so I blatantly ignored the instructions and used the whole packet...and found out why they recommend only half. It's thick. Way too thick to be a hot drink. Lesson learned. I will follow directions! 

But the thickness inspired me to make a Frappe the next time. You all know how I love my Frappes! I mixed it up in my blender (not using any particular style of mixing). I added some milk, some ice, no sweetener and the powder and this is what came out.


The Taste: This stuff carries flavor really WELL. Usually with Frappes I make them slightly over-sweet so the flavor carries over through adding ice. This was not necessary with the Fit Frappe. So what did it taste like? Espresso! Hallelujah! Even though I did spy some cocoa powder in the ingredient list, it did not carry over. It JUST tasted like coffee. Thanks, Big Train. Really.

Other Notes: There are a few things I would be remiss not to point out to you. 
  • The protein is calcium caseinate. It has the same absorbability as whey protein, but from Big Train's explanation (and this makes sense in my addled brain) the texture of caseinate lends itself better to a Frappe and caseinate performs better when heated. (Click here for more information on protein absorbability ratings).For those of you who currently drink Click, note it is also made with a blend of caseinate so we do have a precedent here.
  • Fit Frappe has some sugar alcohols in them. Depending on how much of it you use, this may or may not be problematic. Each time I used the whole packet (I'm stubborn that way) and I was pleasantly surprised to find it didn't cause any problems (and it usually does). I also shared my samples with a few Foodies and none of them reported any problems BUT your mileage may vary, so if you are sensitive to sugar alcohols, just know this. 
  • OBLIGATORY CAFFEINE WARNING: Again, this product does have caffeine in it. That means if you've not yet been cleared to have caffeine, you are going to want to wait.
  • As far as proteins go, this one is among the more pricier ones. A full tub retails for $44.50
Final Verdict: I liked this stuff a LOT! The disclaimers aside, especially for those of us who can no longer do Frappucinos from Starbucks (I had a BAD experience with one...I'll tell you about it sometime) this is a great alternative. I personally would buy a canister and use it only when the Frappucino craving hits. For my budget, I can't afford for this to be an everyday shake! (Hey, Big Train folks...just keeping it real...). I especially liked that:
  • It tasted like JUST coffee. Not vanilla coffee. Not chocolate coffee. Just coffee. I want to get some more to make coffee protein ice cream!
  • It didn't require a bunch of extra sweetener to support the flavor of a blended drink
  • Smooth + Creamy = Happy Nik
The only negatives for me personally was the serving size thing and the price. Other than that, I'd definitely do this protein powder again.

Bariatric Foodie "Fit Frappe Makeover" Recipe Contest


Next week is a very special week on Bariatric Foodie - Fit Frappe week!


Good question! It’s a new protein supplement on the market made by a company called Big Train that specializes in making Frappe mixes for coffeehouses. Fit Frappe is a protein drink Big Train developed for folks who love delicious Frappes but want to get their protein too.

But most importantly...they want to give some Fit Frappe to YOU!

So let’s cut to the chase. There are five flavors total: 3 that are coffee-based, 2 that are not coffee-based.

Boy, do I have a LOT to say about each! So each day this week I am going to post a review of one Fit Frappe flavor. And each day you’ll get the opportunity to WIN some Fit Frappe for yourself!

Do we have to take pictures of this protein recipe?

No. That’s not necessary. But you do have to post the recipe, including all the ingredients.

I don't know the exact amounts of stuff I use. I kinda dump stuff in the blender.

If you don't know the exact amount of ingredients you use, try your best to guesstimate (and that is allowed for this contest)! Remember, others may try your recipe out! As a side note, as you get further out from surgery you might wanna change that. You'd be surprised at the calories we add without even knowing it!

Can our recipes have other products in them (Davinci, Torani, etc.)?

Sure, why not! Whatever recipe you think might be great with Fit Frappe, we want to hear about it!

Does it have to be an existing recipe or can I make one up?

Hey…you know what I always say. Play with your food! In this case, you have my full blessing to play with your recipe. Go for it!

BF Top 5: Healthy Back-to-School Eating!

Monday is back to school for the divas (and the crowd goes wild!).

This year I have a few tools in my arsenal to make sure their lunchboxes are fitting for Foodie Nation heiresses ;)

Here's my top five suggestions to make YOUR lunch box a little bit healthier (for you AND the kids!) Where applicable, links are provided in the title to where you can order.

#5: A Bento-style Lunch Box (link is different from box shown, but you can click on the picture if you're interested in that one)


These things are neat! They allow you to have several different things in one lunch, complete with dipping sauces and it's instant portion control!

#4: Lunch Skins!


Aren't these reusable sandwich and snack bags CUTE??? I bought each of the divas a set of these. I have been on a movement the last year or so to make our lunches a bit more eco-friendly. Healthy earth, healthy you, I always say. (Btw they come in all sorts of designs geared toward boys and girls!)

#3: Lunch Box "Love Notes"

Now if you have older kids (like my 13 year-old) you may get exiled for life into the "silent zone" for packing these, but when my girls were little I used them. My youngest especially battled several bad bouts of separation anxiety in school and these little notes were just the ticket to making her feel better. Mental health is also important in the lunch box!

#2: Plenty of drink sticks or MiO


I used to buy juice boxes until I found out two things. First, that in my kids school there aren't that many opportunities for them to get water during the day (I can't be but so crazed about that. Teachers have a lot to accomplish in a day and I am THANKFUL!). Second is that my kids actually PREFER to drink water, even if flavored water. Well...that was the end of the juice boxes! Now I either pack drink sticks (and you can get naturally sweetened ones if you don't want your little ones consuming artificial sweeteners) or MiO + a bottle of water. That way it's their choice: plain water or flavored!

#1 - Great snacks


My divas lunch boxes always contain the following: A main dish (sometimes it is a sandwich with whole-grain bread, sometimes a cold salad like tuna, sometimes it's a green salad and here's how I keep those fresh for them) + one piece of whole fruit + some sort of indulgence. I also tend to pack them snacks. They have early lunch times and their teachers have embraced that full bellies tend not to be as restless. So I pack good snacks! The girls favorites: veggies with ranch for dipping, a protein bar (I kid you not. They love Quest bars!), an apple or even yogurt. I use these to make sure their yogurt lasts throughout the day.

Like I said, any of these things would serve your kids or YOU well in your healthy lunch endeavors.

WLS-friendly Lunchables (the sequel!)



You all might remember my first, more traditional, WLS-friendly Lunchable.

I’ve been having lots of fun creating different iterations of this idea.

Today’s offering: tuna salad with halved cherry tomatoes, onions, TONS of garlic salt, salt, pepper and a little canola mayo. Alongside it are my “cuke-ers” (cucumber crackers) and I have a nectarine for a sweet finish!

Melissa's Fig Newton Ramekins



So, you all may not know it, but I am stalking…paying attention to you.

When folks post something yummy they are making, I ain’t too proud to reach out and see if I can get the recipe for the Foodie Nation. Because we all deserve a little yumminess in our lives, right?

Today’s dessert recipe is courtesy of Melissa. When I saw this recipe, I knew I HAD to have it on BF. You all know my love affair with ramekins! This recipe is great because it brings together that love of ramekin cooking with an old time favorite -  Fig Newtons!

Melissa’s Fig Newton Ramekins
(Melissa reports this makes 10-12 two-ounce ramekins, less if you use bigger ramekins. In general, ramekins should not be frozen whole, so you may consider halving this recipe if you feel that’s too much!)

Ingredients:

Filling:
8-12 oz. of your favorite dried fruit (Melissa used prunes because that's what she had in the cupboard and to her it makes the recipe taste like a Fig Newton)
1 tbsp. sugar-free maple syrup
1 packet stevia or Splenda
3 tbsp. water
1/4 tsp. cinnamon
1/8 tsp. ground ginger

Crust:
1 cup oatmeal - whatever you like steel cut or old fashioned
1/3 cup vanilla protein powder
2/3 cup almond flour
1 tsp. baking powder
1/4 tsp. salt
1 packet stevia or Splenda
1/2 cup unsweetened applesauce
¼ - ½  c. water (might need additional 3Tbs)

Preheat your oven to 375 degrees.


Using a blender or a food processor, combine filling ingredients and stir until it is the consistency of a paste. Set aside.

In a bowl mix all crust ingredients, saving the water for last. Add in as much water as needed to sticky but not yet liquid texture. 


In 2 oz. ramekins, first press about two tablespoons (or 1/4 cup) of the crust mixture into each ramekin.


Then add about two tablespoons (or 1/4 cup) of the filling mixture. 


Lastly, top with two more tablespoons (or 1/4 cup) of the crust mixture. (NOTE: These measurements are Nik’s approximation given the amount of ingredients Melissa gives for her recipe. Feel free to adjust as you see fit based on the amount of crust/filling that YOU are working with! Also note that, yes, this does technically equal THREE ounces in a 2 oz. ramekin but since some is liquid and some is solid it may pack down into the space provided. Again, use your best judgment!)

Bake at 375 degrees 10-15 minutes or until golden brown.

Melissa likes to top hers with no-sugar added vanilla ice cream (as shown above). If you don’t want to use ice cream, a dollop of fat-free or sugar-free whipped cream would be great as well!

BF Basics: Fast Food



Ok, so a look into every post-op’s crystal ball, because sooner or later this is GOING to happen to you.

You’re on vacation. Or on business travel. Or somewhere where you don’t have ready access to the foods you lovingly prepare (from recipes from Bariatric Foodie) and for whatever reason you don’t have emergency snacks either. All there is to choose from is an endless strip of fast food joints. And you…need to eat.

What do you do???

Now I could be one of those post-op types that says “do not go to the fast food!” and throw old hags in your path admonishing “beware the golden arch!” but that’s not realistic. Especially if you live in the U.S. fast food restaurants are a part of our reality and eventually most of us will end up inside one and need to make some good decisions.

I’m here to help! Because believe it or not, there ARE decent decisions to be made in most fast food chains. Remember, they are out to make money. And they recognize that more and more people are about healthy options. So my guess is that you’ll see more weight-loss friend (not necessary WLS-friendly) options in the future.

Before we get into my picks from some of America’s most popular fast food chains, keep the following in mind:
  • You should NOT use these decent fast food choices to justify eating fast food too much. That’s just wrong.
  • Most fast food chains have their nutrition facts displayed somewhere or on a leaflet. I think they have to by law. If you don’t see it, ask the cashier for it and peruse it BEFORE making your selections.
  • We have really little stomachs. If you choose to let your family eat at any of these places and to ride it out with a beverage for yourself, chances are you are not going to die.  
  • Lastly, this guide is only MY suggestions. You may have others and I encourage you to share them! But bottom line: there is virtually NO situation after surgery that is insurmountable if you have a strategy. 


Yes, I know they are evil. I read Fast Food Nation. But damn if I did not love a McD’s fry hands down back inna day! Nowadays I have a “three fry rule.” The divas, if they choose to get fries, are allowed to give me three. That’s it! Here’s what I usually order for myself when I go to McDonald’s.

Breakfast: I am not a big McD’s breakfast fan. It is noteworthy that their Egg McMuffin is about 300 calories and seems the best choice on the menu. But whenever I go for breakfast and I get the same thing I list for a snack which is…

Snacktime: I usually get a sugar-free vanilla iced latte (yes, even in the winter) with non-fat milk. Lattes read as a snack in my pouch for some reason and if I start drinking sweet for some reason I can’t do salty, making it easier to resist the devilishly delicious fries. Anyhoo, a medium one (which is what I get) will set you back 160 calories, 0g fat (if you ask for nonfat milk), 21g carbs, 8g protein.

Lunch/Dinner: I LOVE the McDonald’s Southwest Salad. It comes with mixed field greens, tomatoes, black beans, corn, shredded cheese, either grilled or crispy chicken (I get the grilled of course) and a lime wedge. TIP: Ask for it without the crispy tortilla strips they usually add to the top and use the lime wedge instead of dressing. This nifty little salad will run you 290 calories, 8g fat, 28g carbs (this is factoring in the tortilla strips you are asking to be left off though), 7g fiber and 27g protein.


Ok raise your hand if, as a post-op, you have marveled at the joy of Wendy’s chili!

It’s good isn’t it??? And just perfect for those days when you just don’t feel like cooking. A small chili (which seems to be the norm) is 210 calories, 6g fat, 21g carbs, 6g fiber and 17g protein. A great choice!

Here’s what else I like:

Breakfast: Nothing. Does Wendy’s even have a breakfast menu? I don’t recall ever eating breakfast there and their website doesn’t have a breakfast section!

Snacktime: I am a dork, but I like their little side salad with a packet of low-fat dressing for a snack. That + a few of the divas chicken nuggets gets me over the hump.

Lunch: Wendy’s has a few good salads but guess what else? They have HALF-SALADS!!! God bless you, Wendy’s. I love both the Apple Chicken Pecan half-salad, which clocks in at 340 calories, 18g fat (much of that from the nuts), 29g carbs, 4g fiber and 19g protein. The other one I’ve tried is Berry-Almond Chicken half-salad which is 280 calories, 12g fat, 24g carbs, 4g fiber and 21g protein.


Enhhh. Much as I love Taco Bell (and I will ‘fess up and say I have tried the Dorito Taco), it’s always going to be a place where you have to make manual adjustments. If you don’t want to take in all the carbs of a tortilla, I highly recommend simply removing them. Their salads aren’t worth the calories and fat.

Since there’s no real breakfast menu to speak of, let’s talk basic meal choices. I like both the chicken and steak fresco tacos. Both come in at 150 calories each. The chicken has 3.5g fat, 18g carbs, 2g fiber and 11g protein. The steak has 4g fat, 19g carbs, 2g fiber and 9g protein.

If you are in the soft food phase, may I also point you toward the pintos ‘n cheese. To me, the fat sort of negates most of its benefit (although depending on your surgery type this may or may not be problematic) BUT if you are stuck there, it’s an option!!! An order has 180 calories, 7g fat, 7g carbs, 1g fiber and 2g protein.


I feel like I should duck and run on this one for all the controversy surrounding this place lately. I will not be discussing it (NOTE: I will also not be publishing comments that discuss it as this is a FOOD blog!). That’s the beauty of the Foodie-world. Our politics are in the stats. Everything else is up to the individual.

That being said, there are some real landmines at CFA. Some of their shakes are equivalent to a fully mature post-op’s full day’s caloric budget! But there are still a few good options.

Breakfast: Stick with some coffee. Decaf if you have to. It suppresses the appetite until you can get to something better. They also have milk. That works as well. 

Snacktime: Neither option has much protein so if you’re new out, it’s probably best to keep driving until you reach a 7-Eleven and get yourself a Muscle Milk! For those of us who can make up the protein elsewhere, their fruit cup is a nice little snack at 70 calories, 0g fat, 17g carbs (fruit sugar) and 1g protein. They also have a side salad which is 70 calories 2.5g fat, 5g carbs, 5g protein (it comes with shredded cheese which is where the fat and protein come from).

Lunch/Dinner: Your best bet here is a salad. All their chargrilled salads are great. I am partial to the Southwest Chargrilled which is 250 calories, 9g fat, 19g carbs, 6g fiber and 26g protein.  

(EDITED TO ADD: I got a good Foodie recommendation from someone whose pouch is NOT the size of Texas. My girl Heather said she gets the grilled nuggets, a fruit cup and a Diet Lemonade - not sure when she drinks it but that's not my business - for 180 cals, 17g protein. Thanks Heather!)

I’m going to stop there. I know there are more fast food restaurants out there and if you’d like my picks for them, leave the name of the restaurant in the comments! For what it’s worth, here are a few places that get an absolute F:
  • Burger King: they have a salad. Kinda. The next least objectionable thing to do is get a Whopper, Jr. and remove the bun. Work on that, BK!
  • Arby’s: I had to stop there once on the way back from Pittsburgh and ended up picking the roast beef out of a roast beef sandwich that I then tossed because it had that gooey fake tasting cheese crap on it. Yuck!
  • Popeye’s: Some of you will argue me down on the red beans/rice. The few times I have allowed myself to go there (and I avoid it because I DO like the food, not because I don’t) I got them to give me red beans but no rice. Enhhh…they could do better. I know there are SOME healthy eaters in New Orleans, dangit!!!
  • Kentucky Fried Chicken: yes, yes, I know they have Kentucky GRILLED chicken now. And I’ve gotten sick every time I’ve eaten it. It is either too greasy or too dry. Other than that, what are our choices? 

I hope you find this helpful for that fateful day when you find yourself in the fast food quadrant. When there, remember the immortal words of Albus Dumbledore. “There will come a time when we must all decide between what is right and what is easy.” Make the RIGHT choices, Foodies!
